Healthy & delicious breakfast muesli recipe

As a breakfast enthusiast I’ve always been a big fan of mueslis. I’ve tried a lot of different variations and made some from scratch. Lately, I’ve been finding myself doing a new patch every week, so I thought why not share my favourite breakfast muesli recipe. After all it’s very easy to make, doesn’t cost a lot and it’s absolutely delicious. Not to mention this breakfast muesli is high in fiber and will keep you full for longer.

The how?

To begin the muesli making heat the pan on the stove on medium-high heat. Add butter and let it melt.
When the butter has melted add the oats, combine them with melted butter. Let the oats toast for a few minutes.
Now add peanuts according to your choice. Let the peanuts and oats get a little golden brown, but be sure to mix them. Otherwise, they might burn or toast unevenly.

When the oats and peanuts are looking nicely golden it’s time to add a generous amount of honey for caramelization and a dash of salt. Let the honey melt and be sure to mix everything. Now, if you wish to, it’s time to add dried berries, dates and coconut flakes. Keep in mind, you have to be very attentive at this point. Honey might start to burn really fast and that we don’t want.

When everything is looking golden brown and the honey is just seconds away from getting burnt, take the pan off the stove. You will understand from the smell, it should be smelling very sweet at this point. When the sugars in the honey are starting to burn the scent will turn into bitter.

Lay the muesli on a parchment paper and let it cool. According to the level of caramelization, the muesli will get crispy. I actually like it both ways – sometimes I make it softer and kind of sticky other times I make it crispy with slight notes of bitterness.

The ingredients

35 gr butter
150 gr oats
30 gr almonds
30 gr hazelnuts
2 tbsp raw honey
1/3 tsp salt
2 tbsp coconut flakes
10 dates, diced
10 gr goji berries
2 tsp chia seeds

Of course, you may use any and all kinds of nuts, dried berries, seeds etc. according to your preference.

It’s breakfast time!

After the muesli has cooled off and dried, you may easily store it in a glass jar. In the mornings I like to have my muesli with some natural yogurt or kefir. Add the muesli and then top it with some additional berries and chia seeds. Yum!
